HOME MADE CHIPOTLE.... DELICIOUS & EASY!

So some of you have been asking about the home made Chipotle recipe  so I figured I would just put it on my blog, that way if anyone else wants it they can have it.
Now I can't take credit for this amazing recipe.. my sister-in-law (Allie Fager) her dad is a wonderful chef and told us this recipe that he put together. This is sooo good, and my husband LOVED it!! :) It's super easy, it's cheap, and healthy for you. So here is the lovely Home made Chipotle Recipe..


What you will need:
2 Cups Rice 
1 Tbs Lime Juice
1 bunch cilantro 
4-5 chicken breasts diced (i think it's easier to dice the chicken before you cook it, makes the cooking process quicker); or thin sliced steak
1 Tbs Veggie Oil
1 pkg taco seasoning
Salsa
Shredded cheese (mozzarella or cheddar) whichever you prefer 
1 diced onion
6-8 Roma tomatoes
1 Big can Pinto Beans or Black Beans (this way you can have leftovers for more meals) 
Tortillas (if you want a burrito) 
Sour cream
Avocado

- Make rice, add the 1 Tbs of lime juice to your water and cook. After the rice is done, add the cilantro and stir. 
- After you dice the chicken put 1 Tbs Veggie oil in your pan, add the pkg of taco seasoning, and add a little bit of salsa (just enough to cover the chicken, or enough to your liking), then cook the chicken fully. 
- Open your can of beans and drain the juice, and put the beans in a bowl, add the remaining juice from your chicken and season your beans with it, then warm it up in the microwave. 
- Cut tomatoes and onion and mix them together in a bowl. 

- Once your chicken is cooked just start layering :) 
Rice, Beans, Chicken (or steak), tomatoes & onions, sour cream, cheese, avocado, etc...

When I made this we had plenty of leftover rice, beans, and tomatoes and onion to last us a few more meals.. I had to make more chicken because we love chicken. Just depends on how much chicken you want in your chipotle :)

Little Brother's 24th Birthday!

The other week Ben and I took a trip down to Wichita to celebrate my brother's birthday. Sadly Ben had to work that evening so when it was party time, Ben missed out :( But we had a such a great day hanging out with Michael and being able to just celebrate with him.
It's crazy to think that my little brother is all grown up.. and what a incredible man he turned out to be. He loves the Lord with all of His heart, and seeks his will every day. He loves his incredible wife so much, and would do anything for her, and He loves his family! We are a close family. Sure we have had our hard times, but it's what bonded us together. Michael is one of my best friends! I know that I can go and talk to him about anything, I know that he will give me godly advice and talk me through things, so I don't go to crazy :)
Michael I am so proud of you and who you have become!! I can't wait to see how God blesses you and Allie in the years to come! You are someone that I admire, and I love you so much. Happy Birthday Lil Bro !!!

My mom in incredible and has always made our birthday cakes!! Whatever we were liking that year growing up, she would try and make a cake with that theme... and her home made frosting is MY FAVORITE!!

Whenever Michael and Matthew are together there is always some type of competition going on haha...this time they were racing down the street to see who could get to the driveway first to win. 

 ok so I had to go to the Eye dr that day, and they dilated my eyeballs...so my pupils were super big! Great photo opportunity!

So on our way to my parent's house we packed 2 grown men, a 6ft 7in Soph guy, a girl, 2 full grown dogs and a min pin in one xterra.. haha it was definitely an adventure!!

This is super gross, but after our nature walk (which we stayed on the path FYI) we came home and Marcus felt something crawling on him so he flicked it onto the ground.. we thought it was a spider at first but after I smashed it a few times with my shoe and it wasn't dying, I looked closer to find out that it was a TICK!!!  

This was before the mass chaos in the xterra with the dogs trying to play musical chairs while we were driving. 
A great way to end a wonderful day ! Beautiful scenery!! 

JESS'S GRADUATION - CLASS OF 2013

Well the time has come for my little sister to graduate High School. I remember when Ben & I first started dating, Ben was out for the summer working road construction so I spent the night over at his parents house with Jess and Megan. There was a big storm that rolled in that night and so Jess and I slept on the pull out couch in the living room, trying to get some sleep between the flashes of lightening.
Jess has grown into such an amazing woman of God!! She has a big heart that is full of compassion, and she also has LOTS of energy! Whenever I went up to KC for the weekend to visit Ben, Jess was always my sleeping buddy. She had 2 twin beds in her room, so she would gladly let me have a bed. It was even MORE FUN when company was in town in KC and Megan had to sleep in the room with us as well... haha oh the stories we could tell :)
It's strange to think that when we go to KC and visit that we won't see Jess except for holidays because she will be in Tennessee for college :( But I'm super excited to see what God does in her life, and how he uses her in College!! I remember going to NYC (Nazarene Youth Convention) and sitting in the hallway talking to her about where she felt God was leading her!!! Nothing excites me more than hearing how God is speaking into lives of His people!!!
Jess, I love you so much, and I'm going to miss you a lot when you leave for college. But know that if you need anything i'm just a phone call away... or I will gladly drive to Tennessee if you need me to :) You are an amazing sister!!!
